Banana Oats Muffins
These delicious muffins have a soft, moist and chewy texture. Over ripe bananas work well with this recipe.
- Well ripe bananas 2, medium size
- All-purpose flour (Maida) 1 cup
- Oatmeal 1 cup
- Salt 1/8 teaspoon
- Baking powder 1 teaspoon
- Baking soda ½ teaspoon
- Butter ½ cup
- Castor/ coarsely powdered sugar ½ cup
- Egg 1, large
- Plain yogurt (dahi) ¼ cup, beaten till smooth
- Vanilla essence 1 teaspon.
- Walnuts 1/3 cup, chopped
- Powdered sugar to sprinkle on top of the muffins
Preheat the oven to 180C (I use Panasonic OTG). Peel and mash the bananas (You should have about ¾ cup of mashed bananas) Mix together the flour, oats, salt, baking powder and soda. Beat the butter and sugar together till light. Add the egg and beat well. Add the flour-oats mixture, mashed bananas, yogurt and vanilla essence. Mix lightly till the ingredients are uniformly combined. Stir in the walnuts.
Divide the mixture between 8 muffin cups and bake till done, about 25 minutes.
Serve warm sprinkled with sugar.
*Note: These muffins may be stored in a container in refrigerator up to a week and reheated in microwave oven before serving (30-40 sec. for one muffin).
