This pretty pink raitha will brighten up a simple meal of roti and curry. It also goes well with pulaos and biriyanis.
- Beetroot 150gm
- Plain yogurt (curds) 300ml, beaten till smooth
- Green chili 2, finely chopped
- Ginger 2cm piece, finely chopped
- Coriander leaves 2tablespoons, chopped
- Salt to taste
To get the perfect “tender crisp” texture, place the vegetables in the steamer only when the water in the steamer begins to boil briskly.
