This pretty pink raitha will brighten up a simple meal of roti and curry. It also goes well with pulaos and biriyanis.

  • Beetroot 150gm
  • Plain yogurt (curds) 300ml, beaten till smooth
  • Green chili 2, finely chopped
  • Ginger 2cm piece, finely chopped
  • Coriander leaves 2tablespoons, chopped
  • Salt to taste

Kitchen Wisdom
To get the perfect “tender crisp” texture, place the vegetables in the steamer only when the water in the steamer begins to boil briskly.

Step 1

Beetroot RaithaWash and cut beetroot into 4 pieces. Steam over boiling water for 8-10 minutes, until lightly cooked. (I use Panasonic electric cooker with the steaming basket)

Step 2

Beetroot RaithaCool, peel and grate it coarsely

Step 3

Beetroot RaithaMix yogurt with green chili, ginger, coriander leaves and salt.

To Serve

Beetroot RaithaMix in the beetroot and serve the raitha cold.
