  • Cauliflower 75gm
  • Spring onion 3 tablespoons, finely chopped
  • Green chilli 1 big or 2 small, finely chopped (optional)
  • Coriander leaves 3 tablespoons, finely chopped
  • All-purpose flour (Maida) 1 cup
  • Sodium bicarbonate ½ teaspoons
  • Salt and pepper to taste
  • Plain yogurt (Dahi) ¼ cup
  • Grated cheese (Cheddar/Mozzarella) 4 tablespoons
  • Oil to cook the Pops
  • Salt and pepper to taste

Step 1

Cauliflower and Cheese Pops

Boil about 2 cups of water, pour it over the cauliflower, and keep covered for 5 minutes. Drain well, and chop the cauliflower into very tiny pieces. Combine it with spring onion, green chili and coriander leaves, add ¼ teaspoon salt and leave aside for 5 minutes.

Mix together the flour, salt, pepper and soda. Add the yogurt and enough water (you will need about ¾ cup) to prepare a smooth batter of medium pouring consistency. Stir in the Cheese and Cauliflower mixture.

Heat a Paddu or Gulliappa Pan, preferably non-stick (I have used a Tako Yaki pan, as I am doing this blog from Kuala Lumpur, where I do not have a gulliappa pan. Tako Yaki is a Japanese snack made with a batter of flour (Maida) and eggs with optional ingredients like cabbage, onion, chicken, seafood or other meats. There is Japanese chain of stalls called Tako Tao selling these snacks. This recipe is inspired by watching the cooks making Tako Yaki in these stalls). Pour about ¼ teaspoons of oil in each cup of the pan. When the oil is hot, reduce the heat and pour spoonful of batter in each cup. Drizzle a few drops of oil on each pop.

Step 4

When the underside is golden brown, turn over the pops with two bamboo sticks or a spoon and a stick. Cook the other side till golden brown and transfer the pops to a serving plate. Repeat the same with the remaining batter.

Serve hot, along with coriander chutney or tomato ketchup.
