Cauliflower Cheese Paratha

INGREDIENTS FOR DOUGH
- Whole wheat flour 1 cup
- Salt ½ teaspoon
- Oil / Ghee 2 teaspoons
- Water, as needed
INGREDIENTS FOR FILLING
- Cauliflower 250gm
- Green chillies 3-4, minced
- Spring onion/ garlic chives 6 tablespoons, minced
- Salt to taste
- Grated cheddar or Mozzarella cheese - 12 Tablespoons, generous, grated
- Wheat flour, to dust
- Oil / Ghee, to cook the parathas
To prepare the dough, combine wheat flour with salt and oil/ghee. Add enough water and knead well into a soft but not sticky dough. Cover and leave aside for 15 minutes.
Cut the cauliflower into 4-6 parts. Place in a bowl and pour boiling hot water over it. Cover and leave aside for 15 minutes. Drain the cauliflower from water. When it is cool enough to handle, grate it. Combine the grated cauliflower with chillies, spring onion/garlic chives and salt (Use salt sparingly as cheese is salty). Divide the mixture into 6 equal parts.
Divide the dough into 12 equal parts and shape into smooth balls (Keep them covered). Take 2 balls of the dough and roll each of them into a thin round. Sprinkle one part of cauliflower mixture evenly over one of the rounds leaving a thin margin all round. Sprinkle 2 tablespoons of cheese over it. Moisten the edges lightly with water. Pace the second round of rolled out dough over the filling. Press the edges to seal. Prepare all the parathas thus.
Heat a chapathi pan (flat griddle) till moderately hot. Place a paratha on it. Drizzle 1 teaspoon of oil/ghee all round and 1teaspoon over it. Cook on moderate heat till the under-side is done. Gently turn it over and cook the other side. Cook all the parathas thus. Serve hot with Dahi (plain yogurt) and Achaar (pickle).
