  • Whole wheat flour 1 cup
  • Salt ½ teaspoon
  • Oil / Ghee 2 teaspoons
  • Water, as needed
  • Cauliflower 250gm
  • Green chillies 3-4, minced
  • Spring onion/ garlic chives 6 tablespoons, minced
  • Salt to taste
  • Grated cheddar or Moz​z​arella cheese​ - ​12​ ​Tablespoon​s​, generous, grated
  • Wheat flour, to dust
  • Oil / Ghee, to cook the parathas

Cut the cauliflower into 4-6 parts. Place in a bowl and pour boiling hot water over it. Cover and leave aside for 15 minutes. Drain the cauliflower from water. When it is cool enough to handle, grate it. Combine the grated cauliflower with chillies, spring onion/garlic chives and salt (Use salt sparingly as cheese is salty). Divide the mixture into 6 equal parts.

Heat a chapathi pan (flat griddle) till moderately hot. Place a paratha on it. Drizzle 1 teaspoon of oil/ghee all round and 1teaspoon over it. Cook on moderate heat till the under-side is done. Gently turn it over and cook the other side. Cook all the parathas thus. Serve hot with Dahi (plain yogurt) and Achaar (pickle).
