Celebration Fruit Bars
Any occasion becomes a celebration when you serve these rich, amazingly delicious fruit bars.
- Raisins ½ cup
- Dates ¼ cup, chopped
- Semi dried apricots ¼ cup, chopped
- Glazed cherries ¼ cup, chopped
- Mixed nuts (Cashew, almond, walnut) ½ cup, chopped
- Apple Juice (No added sugar) ¼ cup
- Apricot jam or Orange marmalade 3tablespoon
- Wheat flour 1 cup
- All-purpose flour (Maida) ¾ cup
- Salt 1/8 teaspoon
- Butter ¾ cup
- Brown sugar 1/3 cup, powdered
Place raisins, dates, apricots and cherries in a sauce pan. Add apple juice. Heat until boiling. Reduce the heat and simmer gently till most of the juice is absorbed and the fruits are soft, about 3-4 minutes. Cool and stir in the nuts and the jam or marmalade.
While the fruits are cooling, mix together both the flours and salt. Beat butter with sugar till creamy. Add the flours and mix gently.
Preheat the oven to 190C. Grease 25cm/20cm baking tray with butter.(I have used two bar trays). Scatter ½ the flour mixture in it and press firmly to cover the base of the tray. Spread the fruit mixture over it. Scatter remaining flour mixtures on top and spread gently with a spatula to cover the fruits. (Surface will not be even).
Bake for 40 minutes. Cool completely and cut into bars.
Note: These bars taste better the next day of making. Keep well for 3-4 days at room temperature and up to 2 weeks in refrigerator.
