Celery Carrot and Potato Soup
This thick and wholesome soup is delicious and filling.
- Butter 2tablespoon
- Onion 100gm, chopped
- Celery 250gm chopped
- Carrot 200gm, diced
- Potato 200gm, peeled and diced
- Parsley 8-10sprigs, chopped
- Water /stock 1-1.2 liter
- Salt and pepper to taste
- Cream 4tablespoon
Melt butter in a skillet. Add onion, cook on moderate heat till it is softened. Add celery. Carrot and potato. Cook stirring for 2 minutes, till the butter is absorbed by the vegetables. Reserve some of the parsley for garnish and add the rest to the skillet. Add water or stock. Cover and simmer till the vegetables are well cooked.
Cool the cooked mixture till it is just warm. Blend till smooth. (I use Panasonic super mixer-grinder).
Transfer the blended soup back to the skillet. Add more water or stock to make the soup of thick pouring consistency. Add salt and pepper to taste. Heat thoroughly. Stir in the cream. Serve hot, garnished with reserved parsley.
