Cheese Bon Bons
These light marbles of savoury choux pastry come with a delicious core of molten cheese inside them. It serves as an excellent teatime snack or appetiser.
- Butter 3 tablespoons
- Water 125 ml
- Salt ½ teaspoon
- Eggs 2
- All-purpose Flour (Maida) ¾ cup
- Green Chillies 2-3, minced
- Ginger 1tsp, minced
- Coriander leaves 2tablespoon, minced
- Cheddar or tasty cheese 75 gm
- Oil to deep fry
Combine butter, water and salt in a saucepan. Heat till the water begins to boil. Lower the heat, add all the flour at once and stir briskly, until it forms a rough dough. Remove from fire and let it cool till the base of the pan feels comfortably hot on your palm.
Add the eggs, one at a time, beating well after each addition, till the mixture forms a soft, smooth and (Shiny dough like a very stiff paste).
Add the minced chillies, ginger and coriander leaves and mix well.
Cut the cheese into 1.5 cm dice. Lightly grease a plate, and heartily grease your palm as well. With greased fingers, take a small lump (Size of a small lime) of the dough and flatten it on your palm. Place a piece of cheese over it. Cover the cheese with the dough and roll lightly to form a ball and place on the grease plate. Prepare all the Bon Bons as such.
Deep fry them in hot oil until it is cooked through and turns golden brown in colour.
Serve hot with chutney or dip of your choice.
