These light marbles of savoury choux pastry come with a delicious core of molten cheese inside them. It serves as an excellent teatime snack or appetiser.

Ingredients
  • Butter 3 tablespoons
  • Water 125 ml
  • Salt ½ teaspoon
  • Eggs 2
  • All-purpose Flour (Maida) ¾ cup
  • Green Chillies 2-3, minced
  • Ginger 1tsp, minced
  • Coriander leaves 2tablespoon, minced
  • Cheddar or tasty cheese 75 gm
  • Oil to deep fry

Add the eggs, one at a time, beating well after each addition, till the mixture forms a soft, smooth and (Shiny dough like a very stiff paste).

Cut the cheese into 1.5 cm dice. Lightly grease a plate, and heartily grease your palm as well. With greased fingers, take a small lump (Size of a small lime) of the dough and flatten it on your palm. Place a piece of cheese over it. Cover the cheese with the dough and roll lightly to form a ball and place on the grease plate. Prepare all the Bon Bons as such.

Serve hot with chutney or dip of your choice.
