Chocolate Fruit pudding
INGREDIENTS FOR GARNISH
- Fruit mixture
- Butter 3 tablespoon
- White or brown sugar 2 tablespoon
- Apple 1 medium size
- Orange 6-8 segments
- A few seedless black grapes
- Lime juice 1 tablespoon
- Cake mixture
- Butter ½ cup
- Powdered sugar ½ cup
- Eggs 2
- Vanilla essence ½ tsp
- All- purpose flour (Maida) 1 cup
- Baking powder 1 tsp
- Cocoa 1 tablespoon
INGREDIENTS FOR CHOCOLATE SAUCE
- Cocoa 6 tablespoon
- Sugar 1 cup
- Hot water ½ cup
- Milk 200 ml
- Vanilla 1 tsp
Line the base of a 7” round cake pan with parchment or butter paper to come up by 1.5 cm above the base. Beat butter and sugar for the fruit mixture till smooth, and spread at the base of the dish. Peel, core and dice the apple. Peel the orange segments and cut into pieces. Cut the grapes into halves. Toss in lime juice and spread over the butter-sugar mixture in the pan. Press down lightly.
Combine the flour with baking powder and cocoa. Mix well. Beat butter and sugar for the cake till light. Add the eggs one at a time, beating well after each addition. Beat in the Vanilla essence. Fold in the dry ingredients, and spread over the fruit mixture already in the pan.
Pour 5 cups of water in the cooking pan of a Panasonic Automatic Cooker. Turn the switch to ‘Cooking’ and cover the pan with the lid. Cover the cake pan with aluminium foil or parchment paper and press the edges close to the sides of the pan. Place the pan in the steaming basket. When the water in the cooking pan begins to boil, place the steaming basket in position and cover with the lid. Let the pudding steam for 45-50 minutes, till the cake mixture is cooked (If the water in the cooking pan evaporates during the steaming of the pudding, the switch will move to ‘Keep Warm’. In this case, add 2 cups of boiling hot water to the pan, replace the steamer and press the switch to ‘Cooking’).
When the pudding is done, switch off the cooker and remove the steaming basket. After 10 minutes, carefully turn out the pudding on to a serving plate. Serve warm with chocolate sauce.
Mix cocoa with hot water until it forms a smooth paste without lumps. Add milk and sugar, and heat until boiling.
Lower the heat and simmer steadily till the sauce thickens slightly. Stir in the Vanilla essence. Serve warm.
Note: The pudding may be stored in refrigerator up to 2 days. Steam for 10 minutes in the steaming basket of Panasonic Automatic Cooker before serving with warm or cold chocolate sauce.
