Cream Cheese Almond Cookies

These soft cookies with a cake-like texture are addictively delicious. They are easy and quick to make. Use butter and cream cheese at room temperature.

- Butter ¼ cup
- Cream cheese ½ cup (100gm)
- Coarsely powdered sugar ½ cup
- Grated orange zest 2 teaspoons
- Orange essence ½ teaspoon
- Vanilla essence 1 teaspoon
- All-purpose flour (Maida) 1 cup
- Baking powder 1 teaspoon
- Salt ¼ teaspon
- Roughly chopped almonds 1/3 cup
Beat butter, cream cheese and orange zest till smooth and light. Beat in the essence. Mix the flour with baking powder and salt and add to the butter mixture. Add almonds and mix lightly to combine. Cover and keep in refrigerator for 1 hour.
Preheat the oven to 180ºC (I use a Panasonic OTG). Grease a baking tray.
Moisten your fingers with water and drop small lime size balls on the tray, 4 m apart.
Flatten slightly and bake till set and light brown on top (about 10 minutes).
Cool slightly and transfer the cookies to a wire rack to cool. Store in a container and consume within 8 days.
These cookies taste better if eaten the next day.
