Bhutthi is an onion flavoured coconut curry from the South-West coast of India. It is generally made with local vegetables, like coccsinia (Tendli), bitter gourd, moringa flowers or tender cashew nut. Fresh double beans, though not a local produce, lends itself favourably to this curry. Coconut oil imparts the characteristic flavour of the region to this dish. Any neutral oil like Canola may be used, if preferred.

  • Fresh double beans 2 cups
  • Grated coconut 1 ½ cups
  • Dry red chilies 6-8 roasted with 1/4teaspoon of oil
  • Coriander seeds 2 teaspoons
  • Tamarind pulp 1.5 cm, round lumps
  • Coconut oil 1 ½ - 2 tablespoons
  • Coconut oil 1 ½ - 2 tablespoons
  • Salt to taste

Cover the double beans with 1 cup of water and simmer till cooked (Avoid over cooking. The cooking time varies slightly depending on the maturity of the beans. The mature ones with pink spots take a couple of minutes longer than the tender ones with beige spots).

Grind the coconut with chillies, coriander seeds, and tamarind pulp into a slightly coarse thick paste (I use a Panasonic Super Mixer-Grinder).

Step 3

Heat the oil in a Kadai or frypan and fry onions till golden brown. Add ¼ cup of water and simmer gently till most of the water is absorbed and the onion is mellow.

Add the cooked beans, ground coconut paste and salt to taste. Add 1/4 - 1/2 cup of water, cover and simmer for 2-3 minutes, stirring a couple of times, until the curry has a semi-solid consistency.

To Serve

Serve hot with steamed rice and dal.
