Pulaos and Biryanis are always welcome with Indians anytime. They are versatile as a center piece of a party buffet or as a one dish family meal. This hearty pulao, bursting with the aroma of freshly ground spices and minced herbs is easy to make, especially in Panasonic automatic cooker.

Ingredients
- Basmati Rice 2 cup (450gm)
- Cloves 4
- Cinnamon 2 pieces, 2.5cm each
- Cardamom 4 (use only the seeds)
- Poppy seeds (khus-khus) 2 teaspoons
- Fennel seeds (saunf) 1 ½ teaspoons
- Mace 2 blades
- Onion 300 gm
- Garlic 6-8 flakes
- Ginger 3cm piece
- Mint leaves A handful (½ cup chopped)
- Coriander leaves A handful (½ cup chopped)
- Green chillies 2
- Ghee or oil 3 tablespoons
- Star anise (chakra Phool) 2
- Shah jeera ¼ teaspoon
- Chilli powder 1 teaspoon, or to taste
- Turmeric powder ½ teaspoon
- Fresh double beans 1 ½ cup (300 gm approx)
- Salt to taste
Garnish with
- Fried cashew nuts
- Fried raisins
- Chopped mint
- Coriander leaves
Recipe Notes
Step 1
Wash the rice well and drain away all the water. Add 4 cups of water and leave aside to soak for 15-20 minutes. Coarsely powder the cloves, cinnamon, cardamom, poppy seeds, fennel seeds and mace together (I use a Panasonic Mixer-Grinder). Slice the onions thinly. Mince garlic, ginger, mint, coriander and green chillies.Step 2


Step 3

Add the spice powder, chilli powder, turmeric powder and the minced ingredients. Stir a couple of times. Add the beans.
Step 4
Add the rice with the soaking water. Add salt to taste. Cover the cooking pan with the lid and let the Pulao cook.

Step 5

When the Pulao is done, the switch will move to ‘Keep warm’. Leave without disturbing for 10-15 minutes. Switch Off the Automatic Cooker, and gently mix the Pulao with a flat, light spatula.
Step 6
Transfer to a serving dish. Garnish and serve hot with Beetroot raitha
