Egg Free Coconut N Lime Cake

You will not miss eggs in this soft and moist cake with a delicious coconut- pistachio crumble topping.

Ingredients
Ingredients for topping
  • Grated coconut 1/3 cup
  • All-purpose flour (Maida) ½ cup
  • Brown or white sugar 1/3 cup, powdered
  • Salt ¼ teaspoon
  • Rose essence ¼ teaspoon
  • Melted butter 3tablespoon
  • Pistachio nuts 3tablespoon, chopped
Ingredients for cake
  • Al-purpose flour (Maida) 1 ½ cup
  • Brown or white sugar 1 cup, powdered
  • Salt ¼ teaspoon
  • Baking soda 1 teaspoon
  • Grated lime rind 2teaspoon, optional
  • Vegetable or coconut oil 5tablespoon
  • Coconut milk ¾ cup
  • Vanilla essence 1teaspoon
  • Lime juice 3tablespoon
  • Butter to grease the dish

Step 1

Egg Free Coconut N Lime CakeTo prepare the topping, combine grated coconut, flour, sugar, salt and essence. Stir in the melted butter and pistachio

Step 2

Egg Free Coconut N Lime Cake Grease a 20cm round Borosil/Corningware dish with butter. Preheat the oven to 190C. (I use Panasonic OTG. Mix together the ingredients for cake from flour to lime rind. Combine oil, coconut milk, vanilla and lime juice. Add this liquid to the flour mix. Stir lightly till I forms a smooth uniform batter. (Avoid over-mixing). Pour it in the prepared dish. Scatter the topping over it. Press down gently. Place in the oven and bake till the cake is done (A tooth pick stuck in the middle should come out clean) and the topping is lightly browned.
