The refreshing orange flavour and soft, moist, slightly dense texture of this cake makes it suitable to serve as a dessert.

  • Use all the ingredients at room temperature except the aquafaba which beats better when chilled.
  • All-purpose flour 1 ½ cup
  • Baking powder 1 ½ teaspoon
  • Baking soda ¼ teaspoon
  • Butter ½ cup
  • Coarsely powdered sugar OR castor sugar ½ cup+ ¼ cup
  • Orange rind 2 teaspoon
  • Orange essence ½ teaspoon
  • Fresh Orange juice 5 tablespoon
  • Aquafaba 5 tablespoon, chilled
  • Extra butter and flour to grease and dust the pan.

Step 1

Grease a 15-17cm round deep cake pan with butter and dust with flour (The base of the pan may be lined with parchment or butter paper if preferred). Preheat the oven to 170C ( I use Panasonic OTG).
Combine the flour with baking powder and soda and mix well.

Eggless Orange Cake

Beat the butter with ½ cup sugar till light and fluffy. Add the rind and essence and beat for few seconds (I use the Panasonic Hand Blender).

Step 3

Wash the beaters and wipe dry. Beat the aquafaba till frothy. Add ¼ cup sugar, about 2 teaspoons at a time, beating well after each addition (It will become white, light and glossy at this stage).

Add the flour to the butter-sugar mixture with orange juice. Mix till partially combined.
Add the aquafaba and fold in gently till the mixture is well combined.
Pour the mixture in the prepared pan and place in the oven.

Step 5

If the top of the cake begins to brown before the cake is done, cover it lightly with a piece of parchment paper (in Panasonic OTG this problem is rare).
After 30 minutes, reduce the temperature to 150C.
Continue to bake till done, about 45-50 minutes.

When the cake is done, take it out and place the pan on a rack. After 5 minutes, turn out the cake on to a plate and invert it back on the rack.

Cool completely before decorating or cutting the cake

Serving Suggestions

Eggless Orange Cake

a. Dust with icing sugar and serve sliced
b. Serve with lightly sweetened fresh cream or vanilla custard and fruits. (Mango, pineapple, blue berries)
c. Frost with icing (I have used orange glace icing) and decorate with orange segments.
