This is of the most popular snacks for parties and celebrations. Surprisingly, they are very easy to make. The rice flour makes them super crisp.

  • Salt 1 ½ teaspoons
  • Water ¼ cup
  • Cashew nuts 500gm
  • Bengal gram flour (Besan) ½ cup
  • Rice flour ½ cup
  • Chilli powder 1 ½ teaspoons, or to taste
  • Thymol seeds (Ajwain) ½ teaspoon
  • Asafetida powder ¼ teaspoon, optional
  • Oil to deep fry
Recipe Notes

Step 1

Masala Cashew Nuts Dissolve the salt in water and sprinkle over the cashew nuts. Mix well. Combine rest of the ingredients, except the oil.

Step 2

Sprinkle this mixture over the nuts and mix well so that the masala is evenly sticking to the nuts. Sprinkle little more water, if necessary, to make the masala mix stick to the nuts. (Do not make it too moist. It should be a very stiff paste, sticking to the nuts)

Step 3

Heat the oil for deep frying till moderately hot. Fry the nuts in batches on low heat till crisp and golden brown.

Step 4

Masala Cashew Nuts Drain on kitchen paper. Cool completely and store in an air tight container.
