Mushroom Masala Roast

Mushrooms marinated in a flavourful green masala and roasted with butter. Serve with crackers as a tea time snack or a starter.

  • *Mushrooms 400gm
  • Salt ¾ teaspoon or to taste
  • Lime juice 2tablespoon
  • Coriander leaves 8-10 sprigs
  • Mint leaves 10-12 sprigs
  • Garlic 4cloves
  • Ginger 3 cm pieces
  • Green chillies 4 or to taste
  • Cumin powder ½ teaspoon
  • Pepper powder ¼ teaspoon
  • Garam masala powder ¼ teaspoon
  • Butter 2tablespoon
  • Crackers to serve
  • Tomato pieces to garnish
  • *Use button mushrooms or a mix of button and shitake mushrooms.

Step 1

Mushroom Masala Roast
Slice the mushrooms and toss them with lime juice and salt.

Step 2

Mushroom Masala Roast 
Chop coriander and mint leaves. Grind them with all the ingredients from garlic to garam masala powder adding 1-2 tablespoon of water. Add this paste to mushrooms, mix well and leave aside for 1 hour.

Step 3

Mushroom Masala Roast
Cook the marinated mushrooms with the marinade in a fry pan, preferably non- stick, over moderate heat. When all the liquid is evaporated, add butter and cook stirring for till the masala and mushrooms are roasted, about 1 ½ minutes. Serve hot with crackers, garnished with tomato pieces.
