Oven Fried Vegetable Patties

These healthy and tasty patties with Indian masala may be served as tea time snacks or in Burger buns. The crisp crust will leave you wondering why you ever deep fried the patties!

  • Potato 500gm
  • Boiled green peas ½ cup
  • Carrot 1 medium, 150gm approx.
  • Beetroot ½, 150 gm approx.
  • Onion 1 medium, 150 gm approx.
  • Oil 4teaspoon
  • Ginger-garlic paste 2teaspoon
  • Chilli powder 1teaspoon or to taste
  • Turmeric powder ½ teaspoon
  • Garam masala powder ¾ teaspoon
  • Salt to taste
  • Coriander leaves 3tablespoon, finely chopped
  • Mint leaves 3tablespoon, finely chopped
  • All-purpose flour (maida) ½ cup
  • Water ¼ cup
  • Bread crumbs to coat the patties
  • Oil to brush

Step 1

Oven Fried Vegetable Patties
Boil, peel and mash the potatoes. Lightly crush the green peas. Peel and grate carrot and beetroot. Finely chop the onion.

Step 2

Oven Fried Vegetable Patties 
Heat 4teaspoon of oil in a kadai or fry pan, preferably non-stick. Add onion and fry till light brown. Add ginger-garlic paste, cook stirring till aromatic. Add carrot and beetroot. Cook stirring for 1 minute. Add chilli, turmeric and garam masala powders. Mix well. Add ¼ cup of water and simmer on low heat till the vegetables are soft and all the water is absorbed. Add potato, peas and salt. Mix well and cook stirring for 1 minutes. Mix in the coriander and mint leaves and switch off the heat.

Step 3

Oven Fried Vegetable Patties
When the mixture is cool enough to handle, divide it into 12 equal parts and shape each part into a disc, about 1 cm thick. Mix the flour with water to make a smooth paste of coating consistency. (Like pakoda batter. The water quantity may vary slightly depending on the quality of the flour). Coat the patties with the batter and roll in bread crumbs. Let the patties “sit” for 15-20 minutes.

Step 4

Oven Fried Vegetable Patties 
Preheat the oven to 190C. (I use Panasonic OTG.). Line the base of a baking tray with parchment or butter paper. Brush the paper with oil. Place the patties over it. Brush the top and sides of the patties with oil.

Step 5

Oven Fried Vegetable Patties
Bake for 20-25 minutes till the top is crisp and brown. Serve hot with ketchup.
Note: These patties may be used in burger buns.
