This delightful rice dessert with fresh pineapple and flavour infused turmeric milk is easy to prepare
- Milk 2 ½ cup
- Turmeric powder 1 teaspoon
- Cloves 4
- Cinnamon 2 pieces, 3cm each
- Mace 3 blades
- Basmati Rice 2cup
- Water 2 ½ cup
- Ghee 2teaspoon
- Finely chopped fresh pineapple 2 cup generous, firmly packed
- Water 1 cup
- Sugar 2 cup
- Ghee 1/3 cup
- Raisins 3tablespoon
- Roasted almonds to garnish
Boil the milk with turmeric powder, cloves, cinnamon and mace. Cover and leave aside for 20-30 minutes.
Wash the rice and drain. Soak in 2 ½ cup of water and leave aside to soak for 20-30 minutes.
Add the soaked rice with the soaking water into the cooking pan of Panasonic automatic cooker. Add 2teaspoon of ghee. Add the Flavour infused turmeric milk through a strainer to the rice. Mix gently. Cover the cooking pan with the lid and press the switch to cooking.
While the rice is cooking, cook the pineapple pieces with 1 cup of water till soft, about 3 minutes. Add the sugar and cook stirring on low heat till the sugar is completely dissolved. Increase the heat and simmer for 1-2 minutes.
Add the cooked rice, ghee and raisins. Cook stirring till the sugar syrup is absorbed by rice.
Serve garnished with roasted almonds.
