Creamy, flavourful and delicious, a bowl of this hot soup is comforting and satisfying. Steaming the pumpkin and then peeling it saves the effort of cutting away the hard skin. The Panasonic Cooker, with Steaming Basket, is ideal for this recipe. Roasted pumpkin seeds make an ideal garnish, providing the colour and texture contrast.

Ingredients
  • Pumpkin 500gm (Use well ripened pumpkin in this recipe)
  • Butter or olive oil 3 tablespoons
  • Onion 200gm (1 ½ cups chopped)
  • Celery stalks 500gm (3 cups chopped)
  • Fresh basil leaves 6-8
  • Water or chicken stock 1 litre
  • Fresh cream 100ml
  • Salt and pepper to taste
  • Roasted pumpkin seeds to garnish

Step 1

Pumpkin and Celery Soup
Discard the core of the pumpkin, chop it into chunks and place in the Steaming Basket of your Panasonic Cooker.

Step 2

Add the butter or in the cooking pan of the cooker and press the switch to "cooking". Add the onion and cook until it is translucent. Add the celery, cook for a couple of minutes (Stir often, while the onion and celery are cooking). Add the basil leaves, water or stock. Add ½ teaspoon of salt, mix well.

Pumpkin and Celery Soup
Place the Steaming Basket in place and cover with the lid. Let the soup cook for 30-35 minutes. Switch off the cooker and remove the steaming basket. Let the pumpkin, and the contents of the pan, cool until it’s just warm.

Step 4

Peel away the skin of pumpkin pieces and blend the flesh with the contents in the pan until smooth(I use Super Panasonic Mixer Grinder).

Pumpkin and Celery Soup
Pour the blended soup back in the cooking pan. Add salt and pepper to taste. Place the pan in position and press the switch to ‘Cooking’. When the soup is heated through, stir in the cream and switch off the Cooker.

To Serve

Sprinkle with roasted pumpkin seeds and serve the soup hot, with thin slices of toasted bread.
