Red Bean (Adzuki/ Cowpeas) Rice

  • Red beans 2/3 cup
  • Basmati Rice 1 cup
  • Tomato 4, medium size
  • Onion 2, medium size
  • Garlic 3 flakes
  • Green chilies 6-8
  • Coriander leaves 15-20 sprigs
  • Salt to taste
  • Oil (preferably olive) 2 tablespoon
  • Cumin powder ¾ teaspoon
Recipe Notes

Step 1

Red Bean (Adzuki/ Cowpeas) Rice Soak beans in water for 6-8 hours. Drain, add 3-4 cups of fresh water and ¾ teaspoon salt. Cook till soft but not mushy. Drain and reserve the beans and the stock (cooking liquid)

Step 2

Red Bean (Adzuki/ Cowpeas) Rice Wash the rice, drain, add 1 cup of water and soak for 15-20 minutes.

Step 3

Finely chop the tomato, onion, gar-4lic, green chilies and coriander leaves. (include the stems)

Step 4

Red Bean (Adzuki/ Cowpeas) Rice Place the rice with the soaking water in the cooking pan of Panasonic automatic cooker. (Preferably use non-stick pan, without the cooking plate.) Add 1 cup of bean stock. Add the chopped vegetables, oil and cumin powder. Add salt to taste. (Remember there is salt in bean stock). Mix gently, cover the pan with the lid and press the switch to cooking. When the rice is done, the switch will move to “Keep warm”. Add the cooked beans on top of the rice and switch off the cooker. Leave without disturbing for 15-20 minutes and then mix gently.
