Tomato Vegetable Rice
This rice is handy to serve as one dish family meal. It is tasty, nutritious and easy to prepare.

- Table rice (Basmati/Jeerasal) 2 cups
- Water 4 cups
- Oil / Ghee 5 tablespoons
- Garlic 8 cloves, minced
- Ginger 3cm pieces, minced
- Onion 200 gm, finely sliced
- Capsicum 1 medium size, diced (Discard seeds)
- Kashmiri chilli powder 1 teaspoon, or to taste
- Garam masala powder 1 teaspoon
- Tomato puree 3 tablespoons
- Green peas ¾ cup
- Salt to taste
- Baby corn 200 gm, sliced
- Coriander leaves to garnish
Wash the rice well. Drain and add 4 cups of water. Leave aside to soak for 15-20 minutes. Pour the oil/ghee in the cooking pan of a Panasonic Automatic Cooker. Press the switch to ‘Cooking’. Add garlic, and cook stirring till it is aromatic and begins to brown. Add ginger, cook for 30 seconds. Add onion, continue to cook till it is brown. (If the switch moves to ‘Keep Warm’ during this cooking, continue to cook and push the switch back to ‘Cooking’ after 2 minutes). Add capsicum, cook for 1 minute. Add chilli powder and garam masala powder, cook for 15 seconds.
Add the rice with the soaking water. Add tomato puree, green peas and salt. Cover the cooking pan with the lid. After 10 minutes, add the baby corn and mix gently with a light, flat spatula. Replace the lid.
When the rice is done, the switch will move automatically to ‘Keep Warm’. Leave without disturbing for 15 minutes. Then gently mix the rice and serve hot garnished with coriander leaves.
