These flavourful and light dosas are an example of “taste from waste”. The white part of watermelon peel, which is generally discarded, is known to possess good flavour and fibre. This is a welcome addition to your collection of favourite dosa recipes. There is very little oil used, giving it an added advantage.

Do not discard the juice that oozes out while grating the peel. Use the thinnest variety (paper/nylon) of poha in this recipe. If this is not available, use ½ the quantity of thicker variety of poha.

Ingredients
  • Rice 2 cups
  • Thin poha (flattened rice) 1 cup
  • Plain yogurt (dahi) ½ cup
  • Grated coconut ½ cup
  • Grated white part of water melon peel 3 cups (including the juice)
  • Salt to taste
  • *Sodium bi-carbonate ½ teaspoon
  • Oil to brush the pan
Recipe Notes

Step 1

Watermelon Peel Dosa (Pancake) Wash and soak the rice in water for 2 - 3 hours.

Watermelon Peel Dosa (Pancake)Soak the poha in yogurt for 30 minutes, before grinding

Step 3

Watermelon Peel Dosa (Pancake)Drain the rice and grind with soaked poha, grated coconut and watermelon peel till smooth, adding water, if necessary, to get a batter of medium pouring consistency. Cover and leave aside to ferment over-night.

Step 4

Watermelon Peel Dosa (Pancake)Next morning stir the batter well and add water, if necessary, to get a thin pouring consistency. It should be thinner than standard dosa batter, but thicker than rava dosa batter. Add sodium bi-carbonate and mix well.

Step 5

Watermelon Peel Dosa (Pancake)Heat a dosa pan, preferably non-stick, till moderately hot. Brush lightly with oil. Pour a large ladle full of batter and spread lightly and quickly. Do not press down or make the dosas too thin. They should be about ¼ cm thick). Cover with a lid and let the dosa cook till the upper surface is full of tiny holes. Open the lid and continue to cook till done (Do not over turn the dosa).Transfer gently to a serving plate. Use all the batter thus. Serve hot with your favourite chutney (Those with a sweet tooth may prefer to eat them drizzled with honey or treacle).
*Important Note: if you are not going to use all the batter at a time, add soda proportionately to the portion you are going to use, and store the rest in refrigerator
